Halibut baked with tarragon butter

Amazing. Healthy. Fare.

Ingredients

  • Fresh local Halibut
  • Lemon
  • Salt
  • Tarragon butter (see recipe on beggars gourmet)
  • Thyme

Process

  1. Bring your butter to room temp or close
  2. Cut the halibut to desired serving size  and salt liberally 20 minutes before cooking
  3. Preheat oven to 275
  4. After the 20 minutes, spread the butter on the fish.
  5. (optional) put a bit of crushed fresh garlic on each piece.
  6. Lay sprigs on all the pieces
  7. Thinly slice lemons and lay on all pieces to cover the fish
  8. Cook from 13 to 20 minutes depending on thickness. A typical one inch piece is closer to 20 but you may need to pull the thinner ends (which u will have) earlier
  9. Plate up. Remove the sprigs and the lemon to side of plate (looks nice as plate presentation)
  10. Top with tarragon butter chunks and zap with lemon

Things to know:

The butter and aromatics on the fish becomes a sauce as it cooks. The lemon functions as a moisture trap. Halibut in the oven is very  easy to overcook. God speed.
