Ingredients:
- 1 to 1.5 lb skin off halibut
- 5-7 poblano peppers
- 1 onion
- 1.5 pints (or more) heavy whipping cream
- 2 -3 tablespoons olive oil
- salt and pepper
- Salt and pepper the fish and set out for at least 30 minutes so its not cold
- Roast the peppers then have them sit in a bag for at least 30 minutes, ideally more.
- Peel and deseed peppers
- Slice up long way so you have lengthy pieces
- Slice onion long way
- Heat oil in a skillet then throw in onions, medium to hight heat, after about 7-8 minutes add the poblanos
- Cook together until nice and pungent smell comes out
- Pour in the cream, turn heat to low and simmer for about 10 mins, salt and pepper to taste. Sometimes poblanos aren’t hot enough you can add a touch of cayenne to cheat
- Set fish in the creamy love, cook ,medium to low heat no more than 3-5 mins per side. Dig a fork in to test doneness
